Ciao cara. Segreti o trucchi non ce n'è molti: poco lievito (ne acquista il sapore), una lievitazione completa e senza fretta, ingredienti di qualità. Ti passo la mia ricetta per la pasta della pizza che uso io, ottima sia stesa sottile (per avere una pizza più croccantina) che più alta (per averla più morbida) ma anche fritta (panzarotti). Eccoti la ricetta: 500 gr. di farina di grano duro, 2 cucchiaini di sale, 5 gr. di lievito di birra disidratato, 290 ml. (circa) di acqua tiepida mischiata a 60 ml. di olio evo. Impastare tutto per circa 5 minuti (10 a mano). Lasciare riposare al caldo per circa 30/40 minuti circa in una ciotola coperta con pellicola unta d'olio. Una volta lievitata, stenderla a seconda del gusto personale e condirla come preferite. La cottura va regolata in base allo spessore ed alla croccantezza desiderata.
